Bacon Chicken Burger

1 pound
Springer Mountain Farms Ground Chicken
5 strips
Bacon, cooked and ground
1 teaspoon
Salt
1 teaspoon
Pepper
1 teaspoon
Paprika
Cooking spray
4 tablespoons
Unsalted butter
4 each
Brioche buns, halved
Blue cheese crumbles
Lettuce
Prepared onion rings
  1. In a large mixing bowl, add ground chicken, ground bacon, salt, pepper, and paprika, and mix until evenly combined.
  2. Separate into 3 even portions and form each into burger patties - roughly 4" in diameter and 1/4" thick.
  3. Heat grill pan over medium heat for 2-3 minutes until wisps of smoke appear.
  4. Spray grill pan with cooking spray and place patties on grill surface.
  5. Grill patties for 4-5 minutes on each side or until internal temperature reaches 165°F.
  6. Remove patties carefully off grill pan and let rest while toasting brioche buns.
  7. Using a brush with the butter melted or a knife with the butter softened, spread butter onto sliced portion of brioche bun; roughly a tablespoon of butter on each brioche bun.
  8. On a cast iron grill over low heat, place buttered sides of bread on grill and grill 1-2 minutes or until golden brown.
  9. Serve topped with blue cheese crumbles, prepared onion rings and your favorite lettuce.
