Chicken Caesar Burger

Ciabatta rolls
1/4 cup
Olive oil, divided
1
Egg, beaten
1/2 cup
Parmesan cheese, grated

Springer Mountain Farms Frozen Chicken Breast Patties
Tomato, sliced
Baby romaine lettuce
Creamy Caesar dressing
  1. Heat oven to 350°F.
  2. Cut roll in half and brush olive oil on both sides.
  3. Place on a baking sheet and toast in preheated oven until edges begin to brown.
  4. Beat egg in a shallow dish and place grated parmesan in a second shallow dish for breading chicken patties.
  5. Dip each frozen chicken patty in the egg, making sure to coat it completely.
  6. Next place in grated parmesan also making sure it coats each patty completely.
  7. Heat remaining olive oil in a frying pan over medium-high heat and place each chicken patty in the hot oil.
  8. Fry on both sides until the internal temperature of the patties reach 165°F and the patties are nicely browned (about 7-9 minutes per side).*
  9. Remove from oil and set aside.
  10. Place baby romaine leaves in a bowl and toss with a few tablespoons of the Caesar dressing.
  11. To assemble burger, place more Caesar dressing on bottom bun (if desired), top with cheesy chicken patty, a thick slice of tomato, dressed lettuce and the top piece of the bun.
