Garlic, minced
1 teaspoon
Paprika

Avocado, peeled, pitted and sliced

Tomato, diced
1/4 cup
Plain low fat Greek yogurt
1/4 cup
Cilantro, roughly chopped
1/4 cup
Scallions, thinly sliced
- In a medium non-stick skillet, cook ground chicken over medium-high heat, breaking up chicken as it cooks for approximately 3-5 minutes.
- Add minced garlic and cook for another minute.
- Stir in paprika, cumin, coriander, black pepper and chili powder, stirring constantly for another minute.
- Add lime juice, and stir to combine.
- Serve over cooked rice and top with avocado slices, diced tomatoes, Greek yogurt, cilantro and scallions.
