Chicken Caesar Burger

Ciabatta rolls
1/4 cup
Olive oil, divided

Egg, beaten
1/2 cup
Parmesan cheese, grated

Tomato, sliced
Baby romaine lettuce
Creamy Caesar dressing
- Heat oven to 350°F.
- Cut roll in half and brush olive oil on both sides.
- Place on a baking sheet and toast in preheated oven until edges begin to brown.
- Beat egg in a shallow dish and place grated parmesan in a second shallow dish for breading chicken burgers.
- Dip each chicken burger in the egg, making sure to coat it completely.
- Next place in grated parmesan also making sure it coats each burger patty completely.
- Heat remaining olive oil in a frying pan over medium-high heat and place each coated burger in the hot oil.
- Fry on both sides until the internal temperature of the patties reach 165°F and they are nicely browned (about 7-9 minutes per side).*
- Remove from oil and set aside.
- Place baby romaine leaves in a bowl and toss with a few tablespoons of the Caesar dressing.
- To assemble burger, place more Caesar dressing on bottom bun (if desired), top with cheesy breaded chicken burger, a thick slice of tomato, dressed lettuce and the top piece of the bun.
