Springer Mountain Farms Boneless Skinless Chicken Breasts*, cut into 1"cubes
3 tablespoons
Italian herb blend (fresh if available, or 1 1/2 tablespoons dried)

Lemon, zested & juiced
1 tablespoon
Olive oil
Salt & pepper, to taste
  1. If using wooden skewers, soak for at least 30 minutes prior to using (to prevent burning on the grill).
  2. Add chicken to a disposable zip top bag.
  3. Whisk together herbs, lemon juice, zest, oil and season with desired about of salt and pepper and pour over chicken in disposable bag, makings sure to coat all pieces with herb mixture. (Recommend marinating for at least 30 minutes, but can be used right away, or refrigerated until ready to use.)
  4. Preheat grill to medium high. (Have an indirect heat area of grill to finish chicken if needed so it doesn't overcook/burn.)
  5. Thread chicken pieces onto skewers (try not to crowd the pieces together too tightly to help chicken evenly cook).
  6. Place on grill grates and cook on each side for about 3-5 minutes or until internal temperature of middle pieces of chicken on each skewer reach 165°F.
  7. When done, wrap in foil for about 10 minutes allowing chicken to rest prior to serving.
  8. Great served with roasted potatoes, grilled veggies and/or a green salad.
