4 easy recipes for back to school

No matter how much we try to plan and prepare, after the long lazy days of summer, families seem to be scrambling to get back in the swing of the back to school hustle and bustle. Convenience often wins over good nutrition to help pinch a few more minutes out of each day. With a little pre-planning or utilizing some weekend time for meal prepping, there’s no reason that our family has to sacrifice delicious and nutritious homecooked meals because there’s just not enough time in our busy day.

We’ve taken 4 of our most popular recipes that are easily prepped or assembled ahead of time to help you get dinner on the table in a hurry.

Chicken Nacho Bowl Casserole

From start to finish, this recipe is only about 45 minutes to prep, cook and serve, but we can help you shave a few minutes off that weeknight dinner time by preparing and assembling the casserole on a day when you have more time, and refrigerating up to 3 days before cooking to eliminate prep time that night. Bake for 20-30 minutes at 350°F or until internal temperature reaches 165°F.

Honey Garlic Chicken Fingers
Another quick recipe that you can have on the able in less than 30 minutes. To help save a few more minutes, prepare the sauce ahead of time (on your prep day) and keep refrigerated until ready to use. Serve with a bag of steam in the bag vegetables or rice, for a complete meal!

White Chicken Enchiladas with Green Chili Cream Sauce

This recipe is great for using up leftover roasted or rotisserie chicken, but if you don’t have any of those handy, you can easily recreate this recipe with any precooked Springer Mountain Farms chicken. On prep day, roast a few boneless skinless chicken breasts or pick up a bag or 2 of our fully cooked fresh or frozen chicken strips. You can also assemble the entire casserole, bake as directed and cool completely on your prep day to reheat for dinner on a busy school night.

Cheesy Biscuit Topped Chicken Pot Pie

Using the Springer Mountain Farms fully cooked oven roasted breast strips and a bag of frozen vegetable medley helps speed up the prep time for this hearty meal. Shave a little more time off a busy dinner rush by using your meal prep day to make the filling for the chicken pot pie so that on meal night, all you have to do is whip up the quick biscuit topping, heat and enjoy!
