Sheet Pan Dinner

cherry tomatoes
6 oz
fresh mozzarella, sliced
1/4 cup
olive oil
salt & pepper, to taste
Italian seasoning
balsamic glaze
1 lb
fresh asparagus (optional)
- Preheat oven to 425°F.
- Place chicken breast on baking sheet.
- Scatter tomatoes around each piece of chicken.
- Drizzle everything with olive oil and season liberally with salt, pepper, and Italian seasoning, and toss to coat.
- Trim ends of asparagus and add to corners in little handfuls. (other good green vegetables to use for roasting in place of asparagus: green beans, zucchini, green pepper, or brussels sprouts)
- Place in oven at 425°F for 15-20 min.
- When tomatoes start to look like the skin is wilting, remove from oven and add mozzarella cheese slices on top of each piece of chicken.
- Return to oven for a few minutes until cheese has melted.
- Remove from oven, drizzle with balsamic glaze and sprinkle with fresh basil.
- Great served with rice or a salad.
