Chicken and Camembert Toasted Sandwich with Pepper Jelly
8 slices
Sourdough bread
4 teaspoons
Olive oil
1 lb
Springer Mountain Farms, Fresh Fully Cooked Oven Roasted Breast Strips
1 jar
Commercially prepared pepper jelly
1 wheel
Camembert cheese, sliced into 1/4" thick discs
1 cup
Pecans, toasted
2 cups
Arugula
- Heat broiler in oven to high.
- Brush each piece of sourdough bread with olive oil on both sides and place on a sheet pan under broiler for 1-2 minutes on each side until lightly toasted.
- Spread a thin even layer of pepper jelly on half of the slices (set the other 4 slices aside to top sandwich) and evenly distribute cooked chicken over the jelly.
- Cover the chicken with slices of camembert cheese and place back under broiler for a few minutes, making sure not to burn or overbrown cheese.
- Sprinkle toasted pecans over melted cheese and add arugula on all of the sandwiches.
- Spread additional pepper jelly on other piece of sourdough toast and top each sandwich.
