Curried Chicken Salad Sandwich

1/2 cup
Dried cherries
1/2 cup
Diced celery
1/2 cup
Walnut halves
8 -12 slices
Sandwich bread
1 cup
Mayonnaise
2 tablespoons
Curry powder
Juice of 1 lemon
2 teaspoons
Freshly ground black pepper
Kosher salt
  1. In a large bowl, add mayonnaise, curry powder, lemon juice and pepper, then stir to completely combine. Season to taste with salt.
  2. Add chicken, cherries, celery and walnuts. Toss thoroughly coat all ingredients with dressing, then refrigerate for 30 minutes.
  3. Remove chicken salad from the refrigerator after 30 minutes.
  4.  Spread 1 cup chicken salad on a slice of bread, then top with another.
  5. Depending on the number of people you™re serving, repeat with remaining chicken salad. Serve!
