Easy African Peanut Stew with Chicken

1 teaspoon
Canola oil

Large onion, chopped
1/2
Jalapeno, seeded and chopped
1 tablespoon
Fresh ginger, grated
1/4 cup
Tomato paste
1 teaspoon
Cumin

Sweet potatoes, cut into 1-inch cubes
32 oz
Chicken broth
1/4 cup
Coconut milk
1 cup
Peanut butter
8 oz
Springer Mountain Farms Fully Cooked Grilled Chicken Breast Strips, cut into bite sized pieces
Cooked rice for serving
Chopped peanuts for garnish
Cilantro for garnish
  1. Heat the oil in a large pot and cook the onion and jalapeno for 3-4 minutes, until softened.
  2. Add the ginger and cook an additional minute, until fragrant.
  3. Stir in the tomato paste and cumin, and then add the sweet potatoes and chicken broth.
  4. Bring to a boil and cook for 10 minutes, or until potatoes are tender.
  5. Stir in the coconut milk, peanut butter, and Springer Mountain Farms Grilled Fully Cooked Chicken.
  6. Serve over rice topped with chopped peanuts and cilantro.
